Banana Peanut Butter Chocolate Chunk Ice Cream
When 21 Day Fix creator Autumn Calabrese bet her brother, Chef Bobby Calabrese that she could make Chocolate Chunk Ice Cream in five minutes, he took that bet. Bobby knows that making ice cream is a tedious process. Preparation usually requires churning heavy whipping cream with an unsightly amount of processed white sugar under freezing conditions for more than an hour. Even with an ice cream machine, the process would never be completed in just five minutes.
But, using a little ingenuity and her knowledge of healthy ingredients, Autumn was able to win the bet. She created a rich, creamy Banana Peanut Butter Chocolate Chunk Ice Cream using frozen bananas and unsweetened peanut butter. The frozen bananas are so sweet she didn’t need to add any sugar.
