Sweet Potato Bites

Cutting sweet potatoes into bite-sized pieces before baking helps speed up cooking time and keeps them from being mushy on the outside raw in the middle.
Use this simply seasoned recipe as a springboard for other creations — you can change up the herbs and spices to complement a variety of main dishes.
Sweet Potato Bites
These super simple Sweet Potato Bites taste great with almost any meal made with a touch of olive oil, freshly ground black pepper, and a dash of sea salt.
Ingredients
- 2 small sweet potatoes, peeled, cut into bite-sized pieces
- 1 Tbsp. olive oil
- 1 dash sea salt (or Himalayan salt)
- 1 dash ground black pepper
- Nonstick cooking spray
Instructions

Preheat oven to 350° F.

Combine sweet potatoes and oil in a medium bowl; mix well.

Season with salt and pepper; mix well.

Layer sweet potatoes on a baking sheet lightly coated with spray.

Bake for 10 minutes; turn and bake for an additional 10 minutes, or until sweet potatoes are tender-crisp.
