Apple Raisin Cake
It’s hard to think of something that feels more like fall than this Apple Raisin Cake.
It’s packed full of delicious ingredients like apples, raisins, cinnamon, and walnuts. It’s healthier than a traditional cake, thanks to whole-wheat flour, olive oil, and honey.
That said, it’s definitely still a treat, so don’t go overboard!
All you’ll need is a big sheet pan. When it’s done, just cut into squares and serve. No fancy layers, frosting, or decorating required!
For an extra something, serve with a small scoop of frozen yogurt. It also tastes delicious with a dollop of plain Greek yogurt, as a healthier alternative to whipped cream.
Wrap leftovers tightly with plastic wrap to keep the cake moist.

Apple Raisin Cake
This moist, rich apple cake with raisins is the perfect dessert to welcome the arrival of Fall, featuring sweet juicy apples, raisins, and crunchy walnuts.
Ingredients
- Nonstick cooking spray
- 5 cups chopped peeled apples
- 1 cup raisins
- ½ cup raw honey
- ⅓ cup chopped raw walnuts
- ¼ cup extra-virgin olive oil
- 2 tsp. pure vanilla extract
- 1 large egg beaten
- 2½ cups whole wheat flour
- 1½ tsp. baking soda
- 2 tsp. ground cinnamon
Instructions

Preheat oven to 350° F.

Lightly coat a 13 x 9-inch baking dish with spray. Set aside.

Combine apples, raisins, honey, and walnuts; mix well. Allow mixture to stand for 30 minutes.

Add oil, vanilla, and egg; mix well. Set aside.

Combine flour, baking soda, and cinnamon; mix well.

Add flour mixture to apple mixture; mix until just blended.

Place batter into prepared pan.

Bake for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Let cool slightly before serving.
