To roast the chickpeas: Drain, rinse, and pat dry one 15-oz. can of chickpeas.
Spread chickpeas on a baking sheet sprayed with nonstick cooking oil and drizzle with 2 tsp. olive oil; add salt and pepper to taste.
Bake in an oven heated to 425°F for 12 to 18 minutes, or until lightly browned and crisp. Makes three servings, ½ cup each.
