Ingredients
- 1 large eggplant
- 3 Tbsp. tahini (sesame paste)
- 3 Tbsp. fresh lemon juice
- 1 clove garlic finely chopped
- ¼ tsp. sea salt
- Water
Instructions

Brown eggplant in broiler or on a gas burner, turning frequently, for 5 to 10 minutes, or until completely blackened. Scoop insides into a medium bowl; discard skin.

Add tahini, lemon juice, garlic, and salt to eggplant; mix well.

Add water if consistency is too thick.
