Apple Blondies
With golden raisins, unsweetened applesauce, and pumpkin pie spice, this no-bake recipe for Apple Blondies with Vanilla Shakeology is perfect for fall.
They have just the right amount of sweetness, and thanks to the protein and healthy fats, they’re a great snack.
Not a big fan of raisins? Leave them out or swap in another dried fruit.
You can get creative and sub-in ingredients like shredded coconut, or use dried apple pieces to make Double Apple Blondies; chopped dried apricots will get you Apricot Apple Blondies; or use cranberries to create Cranapple Blondies.
Pro tip: These balls can also be pressed into an 8 x 8-inch (20 x 20-cm) pan, refrigerated for 1 hour, cut into sixteen pieces, and served as blondies.
Apple Blondies

Ingredients
- ½ cup / 60 g coconut flour
- 2 scoops Vanilla Shakeology
- 1 tsp. pumpkin pie spice
- ¼ cup / 60 g all-natural almond butter
- ⅓ cup / 80 ml pure maple syrup
- ½ cup / 120 g unsweetened applesauce
- 1 Tbsp. unsweetened almond milk (optional)
- ½ cup / 45 g chopped unsalted walnuts
- ½ cup / 70 g golden raisins
Instructions

Combine coconut flour, Shakeology, and pumpkin pie spice in a medium bowl; mix well. Set aside.

Combine almond butter and maple syrup in a microwave-safe bowl. Heat on high for 30 to 45 seconds, or until almond butter is melted; mix well.

Add almond butter mixture to coconut flour mixture; mix well with clean hands or a rubber spatula.

Add applesauce, almond milk, walnuts, and raisins; mix well.

Roll into 16 balls, about 1¼-inch (3 cm) in diameter each.

Serve immediately or refrigerate in an airtight container for up to 3 days, or freeze for up to 1 month. Thaw before serving.
