Avocado Ice Cream

If the idea of avocado ice cream sounds strange to you, that’s because you’ve never tried it.
If you have tried it, then you know that it’s a delicious treat! Creamy, delicious homemade ice cream – ok, nice cream – can be ready to eat after just a few minutes of prep.
If you’re impatient, you can eat it straight out of the blender (we won’t tell), or let it firm up in the freezer for a few hours before scooping into a bowl.
Our luscious avocado ice cream gets extra green color – and antioxidants – from a secret ingredient: spinach! The added greens are flavorless (your kids will thank you for this) so no one has to know they’re eating healthy ice cream.

Avocado Ice Cream
Avocado ice cream might sound strange, but this is creamy and delicious!
Ingredients
- ½ large banana cut into chunks
- ½ cup unsweetened almond milk
- ½ medium ripe avocado
- 1 cup raw spinach
- 1 cup frozen chopped mango
Instructions

Place banana in plastic bag; freeze for 4 hours, or until completely frozen.

Place almond milk, avocado, frozen banana, spinach, and mango in blender; cover. Blend until smooth.

Pour into a freezer-safe container; freeze until set.
