Ingredients
- 1 Tbsp. sesame oil
- 1 inch fresh ginger peeled, finely chopped
- 2 cloves garlic finely chopped
- 8 medium heads baby bok choy trimmed, cut in half lengthwise (about 2½ lbs.)
- ½ cup low-sodium organic vegetable (or chicken) broth
Instructions

Heat oil in large saucepan over medium heat.

Add ginger and garlic; cook, stirring frequently, for 1 minute.

Add bok choy; cook, for 2 to 3 minutes, turning once, until lightly browned on each side.

Add broth; cook, covered, for 3 to 5 minutes, or until bok choy is tender-crisp.

Serve immediately.
