Coconut Pineapple Popsicles
Coconuts and pineapples are tropical vacations for your mouth.
Just the smell of coconut alone evokes images of white sand beaches, palm-lined shores, and fruity summer cocktails with teeny paper umbrellas by the pool.
And even if you’re nowhere near a tropical island this summer, you can still enjoy these Coconut Pineapple Popsicles.
This popsicle recipe also includes a touch of fresh cilantro for an unusual, flavorful kick.
(But if you’re on Team “Cilantro Tastes Like Soap,” try basil or mint, or simply omit!)
Coconut Pineapple Popsicles
In our recipe for Coconut Pineapple Popsicles we've added a twist with a touch of fresh cilantro, giving each pop a flavorful kick.
Ingredients
- 1 cup cubed pineapple
- ½ cup unsweetened pineapple juice
- ½ cup canned lite coconut milk
- ¼ cup unsweetened shredded coconut
- 2 Tbsp. chopped fresh cilantro
Instructions

Place pineapple, pineapple juice, coconut milk, coconut, and cilantro in blender; cover. Blend until smooth.

Pour pineapple mixture evenly into ice pop molds; freeze for at least four hours, or until set.
