Ingredients
- 1 tsp. olive oil
- 1 cup raw spinach
- 8 large egg whites (1 cup)
- 1 cup steamed broccoli florets
Instructions

Heat oil in medium nonstick skillet over medium-low heat.

Add spinach; cook, stirring frequently, for 3 to 4 minutes, or until wilted.

Add egg whites. Do not stir. As eggs set, lift edges, letting uncooked portion flow underneath.

When eggs are almost set add broccoli; cook for 1 to 2 minutes, or until heated through. Gently fold in half.
