Peppermint Mocha Shakeology Cannoli Cups
Cannoli are a traditional Italian dessert pastry — a deep-fried pastry dough shell filled with a sweet creamy ricotta filling.

But if you managed to get your hands on a carton of our limited-edition seasonal Peppermint Mocha Shakeology, you can re-create the crunchy/sweet deliciousness of traditional cannoli, without mountains of butter, cream, and deep-frying.
In this recipe, we swap in phyllo dough cups for the fried shell and blended Peppermint Mocha Shakeology, almond milk, part-skim ricotta, and reduced-fat cottage cheese for a light, creamy filling.

Peppermint Mocha Shakeology Cannoli Cups
Ingredients
- 1 scoop Peppermint Mocha Shakeology
- 1 cup / 245 g part-skim ricotta cheese
- ½ cup / 115 g reduced-fat (2%) cottage cheese
- ¼ cup / 60 ml unsweetened almond milk
- 1 (12-count) package phyllo dough cups, frozen
- 1 Tbsp. dry-roasted cacao nibs, divided use
Instructions

Place Shakeology, ricotta cheese, cottage cheese, and almond milk in a food processor; cover. Pulse to combine.

Pour mixture into a piping bag or resealable plastic bag (cut one tip off for plastic bag). Pipe equal amounts of filling into each cup. Garnish each cup with ¼ tsp. of cacao nibs.

Serve immediately, or keep refrigerated in an airtight container for up to 1 day.
