This recipe uses pre-mixed pumpkin pie spice — minimal effort to bring your standard oatmeal to the next level.
For pumpkin pie flavoring, all you need is pumpkin puree, pumpkin pie spice and chopped pecans.
Pumpkin pie spice is a pre-mixed spice blend that you can find at the grocery store. It contains all the spices you’d add to a classic pumpkin pie, such as cinnamon, ginger and cloves.
If you prefer, you could also make your own pumpkin pie blend – playing up the spices you like best. Instead of chopped pecans, you could use chopped walnuts or almonds, or feel free to skip the nuts entirely.
If you’ve got leftovers, add a splash of water or almond milk to loosen the oatmeal, and reheat.

Ingredients
- 1 cup water
- ½ cup dry rolled oats
- ¾ cup pure pumpkin puree
- ¼ tsp. pumpkin pie spice
- 2 Tbsp. chopped pecans (or walnuts)
- 2 tsp. pure maple syrup (or raw honey)
- ½ cup unsweetened almond milk
Instructions

Bring water to a boil in medium saucepan over medium heat. Add oats; cook over medium-low heat, stirring occasionally, for 3 to 5 minutes. Remove from heat.

Add pumpkin, pumpkin pie spice, and pecans; mix well.

Divide evenly between two serving bowls; top each with 1 tsp. maple syrup and ¼ cup almond milk.
