Cool down on a hot day with a bowl of this icy-cold Mint Chocolate Chip Nice Cream
Ingredients
- 1 medium zucchini, chopped, frozen
- 1 scoop Cookies & Creamy Shakeology
- 2 Tbsp. unsweetened almond milk
- ¼ tsp. peppermint extract
- 3 to 4 drops all-natural green food coloring (optional)
- ½ Mint Chocolate Chip BEACHBAR, crumbled
Instructions

Place zucchini, Shakeology, almond milk, extract, and food coloring (if desired) in a food processor (or high-powered blender); cover. Blend until smooth.

Add to a serving bowl; top with BEACHBAR. Enjoy immediately, or freeze in an airtight container for up to 1 month. If frozen, set out at room temperature for 15 minutes to soften before serving.
