Snickerdoodle Pumpkin Pie
Pumpkin pie usually makes an appearance once or twice year and for most people that’s enough, considering the amount of sugar, eggs, evaporated milk in a pie plus the whipped cream topping.
Delicious to be sure, but it’s … a lot.

To make a healthier whipped topping add ¼ cup aquafaba (chickpea liquid) and 2 tsp. maple syrup to a medium mixing bowl; beat with an electric mixer on high speed for about 5 minutes or until stiff peaks form.

Snickerdoodle Pumpkin Pie
Ingredients
- 15 oz. / 425 g 100% pumpkin puree
- 1 large banana, cut into chunks
- 1 scoop Snickerdoodle Shakeology
- ½ cup / 120 ml water
- 2 Tbsp. all-natural almond butter
- 1 Tbsp. pure maple syrup
- 1 Tbsp. extra-virgin coconut oil
- 1 tsp. pumpkin pie spice blend
- 1 tsp. pure vanilla extract
- 1 (9-inch / 23-cm) Graham cracker (or whole-wheat) pie crust
Instructions

Place pumpkin, banana, Shakeology, water, almond butter, maple syrup, oil, spice blend, and extract in blender; cover. Blend until smooth.

Pour into pie crust. Refrigerate for 2 hours or until set.

Cut into 8 equal slices. Serve immediately or refrigerate in an airtight container for up to 24 hours, or freeze for up to 1 month.
