Strawberries and Cream Mousse

Strawberries and Cream Mousse

Ingredients
- ⅓ cup / 75 g reduced-fat (2%) cottage cheese
- 1 scoop Strawberry Shakeology
- 2 Tbsp. unsweetened almond milk
- ½ cup / 85 g sliced strawberries
- 2 Tbsp. unsalted sliced almonds
Instructions

Place cottage cheese, Shakeology, and almond milk in blender; cover. Blend until smooth, scraping down sides as needed. If mixture is too thick, add more almond milk (or water) 1 Tbsp. at a time.

Spoon half of the cottage cheese mixture into a serving bowl; top with half of the strawberries. Repeat with remaining cottage cheese mixture and strawberries. Sprinkle almonds over top. Serve immediately.
